Chocolate Covered Strawberries

Whenever I cook, I always make sure I use ingredients that are easy to find in the local supermarket. If you have to run all over the city looking for something, it's easier to buy it ready made and that takes the fun out of the preparation.

My 'Chocolate Covered Strawberries' will not cost you $25.00 a pound and you can make fresh ones everyday because they are so simple. Quantity of any of the ingredients is not important. You just make as many as you want. It's best to eat them in a day or 2, so the berries maintain their freshness. I have tried several different chocolates and found the following to be the best in smoothness, richness and flavor. If you like more chocolate per bite, use smaller berries. This recipe can also be used on other berries, bananas, etc.

Chocolate Covered Strawberries

fresh strawberries, washed and completely dried
Dove Milk Chocolate
Dove Semi-sweet Chocolate
plastic wrap, waxed paper or parchment paper

Cover a flat plate with paper product. Set aside.

Combine equal amounts of semi-sweet and milk chocolates (about 2-4 per berry, depending on the size). Melt in the microwave on a medium high setting so you don't scorch the chocolate on 30 second intervals. (You know your microwave.) Stir thoroughly when melted.

Dip each strawberry into chocolate mixture. Allow excess to drip off and then scrape the bottom off with a knife. Place on papered plate.

When all berries are finished, chill in the refrigerator until firm about 1 hour. The uneaten ones must remain refrigerated. They will keep for another 1-2 days.
